Spinach Kugel Recipe for the High Holidays

 Spinach kugel is a Rosh Hashana cuisine. It is serve during the Rosh Hashana seder, after the blessing “May it be Your will, Lord our God and the God of our fathers, that our enemies, haters and those who wish evil upon us shall depart.”  “יהי רצון מלפניך אדוני אלוהינו ואלוהי אבותינו שיכרתו אויביך ושונאיך וכל מבקשי רעתנו”


Ingredients

2 shredded potatoes
1 large onion, chopped
1 10-ounce frozen chopped spinach 
4 eggs
1 teaspoon of chicken soup powder
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons seasoned bread crumbs

Directions (Serving 8-10)

Preheat oven to 350 F. 
Beat eggs
Add the frozen spinach and the rest of the ingredients 
Bake for 40 minutes, 
or until the kugel is golden brown and firm.
